Duck Eggs for Gluten Free Baking

Baking gluten free can be a challenge. You want the people you love to have the best, despite the need to keep gluten out of their diet. Duck eggs are just the thing. Take it from Annaliese Keller on EdibleParadise.com, “For gluten free baking, duck eggs are excellent. The added protein in the albumin (whites) binds the gluten free ingredients better and improves the texture considerably.”

Lillington Farms Hatching Policy

Although incubators are more efficient, baby ducklings are happier and more secure when they grow up with a mother’s care. Few sights are more touching than seeing a mother and her ducklings.

The mother duck often sits on the eggs for over a month before the ducklings hatch. She rarely eats or drinks. Keeping her eggs warm is her top priority.

In truth, several ducks often lay their eggs in the same nest before one of them begins to sit on the eggs, so most of the resulting ducklings have no blood relationship to their mother. Like so many humans, you would never know it by the way the new duckings look up to the mother and the way the mother looks after them. To ducks, love is more important than blood.

Our ducks are not a collection of agricultural machines. They have families and care for each other. They have fun, friendship, and adventures. We produce thousands of eggs and run a pretty good business, but somethings are more important than efficiency. Our customers are always welcome to come see the ducks. We take pride in the happiness and healthiness of our animals as well as our customers.

Predator Protected with Room to Roam

All our ducks spend the night protected from predators.  Evenings are the most dangerous time for ducks. Owls, foxes, and other crafty animals would just love to get their claws or paws on our beautiful ducks. Trapping would be unkind, so we make our aviaries impenetrable fortresses.  We have one of the largest private aviaries in North Carolina, over 21.000 cubic feet.

During the daylight hours, our Khaki Campbell and Pekin ducks wander the property free to explore as they please.
